Dulce De Leche Bars

December 1, 2017

This recipe was actually given to me by a patient of mine when I worked as a medical assistant in an Oncology office. It was Christmas time and as a thank you to the staff for always taking care of her, she gave us these Dulce De Leche Bars. After eating these I knew I needed the recipe. Once she gave me the recipe, I made it, and I was hooked…as well as my friends. I’ve been making these bars every holiday, special occasion, and for special requests. To make these delicious bars here is what you will need.

For the Crust:

18 graham crackers

4 Tbs. sugar

½ Tsp. salt

1 stick of butter

For the Filling:

3 Tbs. cold milk

4 Tbs. cornstarch

2 cans condensed milk

4 Tbs. butter

2 Tbs. light corn syrup

For the Topping:

8 ounces milk chocolate chips

2 or 3 heaping Tsp. of oil

For the Crust:

Take 18 graham crackers and put them in the food processor and pulse until graham crackers are in tiny crumbs. Then transfer to a bowl.

Add sugar and salt and mix thoroughly. Then add 1 stick of melted butter to the crust mixture. Mix until evenly moistened.

Transfer crust mixture to a baking pan lined with non-stick foil.

With your hand, gently press the crust mixture evenly into the pan.

Refrigerate for 30 minutes. Then bake the crust at 350 for 17 minutes until lightly brown. When done, remove from rack and let it cool.

For the Filling:

In a cup add the milk and cornstarch and mix. In a saucepan bring condensed milk, butter, and corn syrup to a boil over medium heat stirring with a whisk constantly (to prevent burning). Whisk in cornstarch milk mixture and cook for 2 minutes whisking non-stop.

Pour mixture onto crust and bake at 350 for 8 minutes until topping starts to bubble. Remove from the oven and cool in the fridge for 2 hours. Or over night.

For the Topping:

In a bowl, melt the chocolate chips and oil in the microwave for 1 minute and 15 seconds. Stir with a spoon until chocolate chips have melted and are smooth.

Spread the chocolate evenly over the filling with a spreader or spoon. Refrigerate for 45 minutes or until ready to serve. Cut into bars and enjoy with a glass of cold milk!
